It's Christmas tomorrow and I decided to bake some red velvet cupcakes for my family. I love everything sweet and these look perfect for Christmas, I think they're good to eat and look lovely too.
Here's what you need!
Ingredients for the cupcake (24 cupcakes):
- - 250 grams flour
- - 2 tablespoons cocoa powder
- - 2 teaspoons baking powder
- - ½ teaspoon bicarbonate of soda
- - 100 grams butter
- - 200 grams sugar
- - 1 tablespoon red paste food colouring
- - 2 teaspoons vanilla extract
- - 2 eggs
- - 175 ml buttermilk
- - 1 teaspoon cider vinegar
Ingredients for the frosting:
- - 500 grams icing sugar
- - 125 grams cream cheese
- - 125 grams butter
- - 1 teaspoon cider vinegar
- - 1 teaspoon of vanilla extract
- - decorations you prefer
First of all put in a bowl all the dry ingredients, flour, cocoa powder, baking powder and bicarbonate of soda. Turn on the oven at 180°.
Next in another bowl cream the butter and the sugar then the red colouring and the vanilla extract.
Then add a spoon of the dry ingredients then a egg, another spoonful of dry ingredients, the other egg and all the content of the other bowl. Mix it and in the end add the buttermilk and the cider vinegar.
- Now you're ready to put your cupcakes in the oven for 20 minutes! When they're ready and cold prepare the frosting mixing icing sugar, cream cheese, butter, cider vinegar and the vanilla extract. Mix it till it becomes solid and smooth. Then use the technique you prefer to put your frosty on your cupcakes and decorate them as you prefer.
- Ta daaaa, your cupcakes are ready!
